Course Description

Learn how to incorporate the most nutritious dishes and techniques from the world’s most ancient cuisines into your wheelhouse. Explore the most healthful components of cuisines like Mexican, French, Japanese, Mediterranean, Middle Eastern and Vietnamese.

Learner Outcomes

In this course, students learn:

  • How to create nutritious international dishes.
  • Basic cooking techniques.
  • Basic knife skills.
  • Healthy cooking.

 

Notes

Students are required to attend 80% of scheduled classes in order to earn credit for the program.  Enrolled students are also expected to participate in class discussions, role play, case study activities and other learning opportunities.

Uniform required: hat or hair covering, chef's coat, smock or apron and closed toe shoes.
